INGREDIENTS:
- 1 small carrot, chopped
- 1 teaspoon of fresh ginger, chopped or diced
- 1/4 tsp ground cinnamon
- 1 large ripe frozen banana
- 1 scoop vanilla protein powder (optional)
- 1/2 tsp. vanilla extract
- 1 pitted date (optional dry, soak in warm water for 10-15 minutes)
- 1 healthy pinch ground nutmeg
- 1/2 – 1 cup dairy-free milk
Optional:
- 1 tbsp. chopped walnuts or hemp seeds
- Shredded coconut
- Shredded carrots
INSTRUCTIONS:
- To a high-speed blender, add the cinnamon, vanilla, fresh ginger, nutmeg, date (optional), dairy-free milk, and protein powder (optional).
- Blend the ingredients together until they are smooth and thick. If you need to thin it out, add more dairy-free milk.
- To make it taste better, add more cinnamon for warmth, ginger for spice, or date for sweetness.
- You can serve it as is, or you can add walnuts, hemp seeds, shredded coconut, or chopped carrots on top (optional).
- It can be refrigerated for up to one month.
