INGREDIENTS:
- 1/4 cup (80g) of pure maple syrup.
- 1/2 cup (120g) of lemon juice.
- 2 tablespoons (30g) of vanilla dairy-free yogurt
- 13.5 oz can of “lite” coconut milk
INSTRUCTIONS:
- Place lemon juice and half of the can of coconut milk into ice cube trays. Freeze until solid or overnight.
- Add the yogurt, maple syrup, ice cubes, and the remaining half can of coconut milk. Blend just until fluffy, careful not to over-process it.
- It should be foamy and cold. If you want to make it sweeter, taste it and add more sugar as needed.
- You can add a little ice if you want it to be colder, but be careful not to use too much.
